Fresh Salsa

Tomorrow me and the hubby are going off into the wilderness. No phones, not television,.... no bathroom. Yuck! I am however happy that we get to go fishing and spend some time away from this oppressive heat. It is supposed to be almost 120 tomorrow. I am so glad we will not be melting here in the city. I am going to miss grilling out with friends. We only get to use a propane stove because of the fire dangers and that is just not the same. I hope when we go fishing this weekend we catch lots of fish. That would be nice. I love to eat fresh fish. Sometimes I feel a bit deprived because we live so far inland. We can't just go to the docks and pick up fresh seafood anytime we want. For those of you who can, you are so lucky! I envy you guys and miss the days when we could have fresh seafood anytime we wanted it.

Since today I spent the day doing all of the last minute shopping and packing, I did not have much time to cook. I did however make a fresh salsa that was very delicious. I do not know why I have never made one before? It is so simple and you can control all of the ingredients you put in it. You can make as spicy or sour as you like. I like my salsa with a little extra bite of sour from fresh squeezed lime. My husband likes it more spicy. I took it easy on him and put the extra lime on a little portion for me. I think next time I will add a little more jalapeno and spice it up just a touch. All and all I am proud of my first effort.

I believe this will go well with any bbq or party you may be having or attending.

Fresh Salsa
2 14 oz cans of diced tomatoes
1 jalapeno diced
1/2 onion diced
Juice from 2 limes
1/4 c cilantro
5 oz diced green chilies
1 T cumin
1 tsp salt
1 tsp celery salt
2 tsp pepper

Directions
combine all ingredients together.

 Cover and refrigerate for at least 2 hours in order for the flavors to meld together. Serve with your favorite chip. Enjoy!
