It's Back!

After much anticipation on my part, my blog is finally up and running. This is good news at least to me. This just in.... I received an B in my nemesis class, aka, brief calculus. Woo Hoo! This means I will never have to take it again. Thanks goodness. I don't think I could survive a second round.

Is everyone having a good weekend so far? Mine is going to be full of work. Now that I have a break from school I need to not only look for a new job but also try and pick up more hours because there are a couple of things I have my eye on. Shoes for 1, I saw a pair that would look awesome on me but it is a bit of a splurge so I figure if I am patient and save up for them I will buy them when I have the money or I will change my mind and get something else instead.

Two, I want baseball tickets. I think it would be nice to see my team in town. They only come once this year so its my only chance.

 Three, Guy Fieri is coming to town and I want to see his show. I think it would be a blast. Finally, the hubby and I want to take a little vacation so in order to do this we need a little extra money.

I see tranquil breezes in our future.
This means I need to work more hours so I can have a little rest. It just doesn't seem right you have to work harder in order to take a break. Oh well, what can you do unless you win this lottery you have to work for what you want and need.

Yesterday, I was feeling a little spicy so I figured I knew what would satisfy my craving. Red beans and rice with sausage. It sounded delicious and filling. I wanted something that would fill me up and prevent me from overindulging in the sweets. It did hit the spot.
This recipe was so easy to make and it was really tasty. I think it was just what I wanted.

Red Beans and Rice with Sausage

Ingredients:
2 Tbs of olive oil
1 lb of spicy Italian Sausage
1 medium onion diced
3 cloves of garlic minced
1 14oz can diced tomatoes
1 14 oz can red kidney beans
1/2 c of red wine
1/2 c of chicken broth
5 cups of white rice cooked
1/2 tsp cayenne pepper
salt and pepper to taste

Direction:
Heat skillet on medium heat and add olive oil. Saute' onion until it begins to soften, then add garlic. Add a little salt and pepper. Continue to cook for a few minutes. In the meantime cut sausage into bite size pieces and brown on all sides. Cover the skilled and cook for about 5 minutes. Remove lid and add the red wine and cook until reduced by half. Add the tomatoes and beans to skillet. Cook for a couple of minutes. Add rice and cayenne pepper. Add chicken broth and continue to cook until sausage is cooked through. Add salt and pepper to taste.

You can add as much pepper as you like. I really can't stand that much heat so I took it easy.
You can also use less rice if you like. I like alot of rice with mine.



I am so happy I passed math!!! That news just made my weekend. I know I just told you this a few minutes ago but I am super happy about it.:)

  1. Congratulations on your calculus grade! And red beans and rice is right up my alley, I am very picky when it comes to this dish since most make the mistake of under seasoning but yours looks flavorful and lip smacking, can't wait to try the recipe, thanks for sharing! =]
